Is there specific distinguishing traits/stamps that can identify legit t91 parts from airsoft or fakes?
This is primary in reference to the basic rear sight and also the carry handle sight.
Any other parts that can be ID'd are also welcome to be mentioned.

No stampings or marks for Mil-Spec T91 parts since they are not like here in the US we've got tons of firearms manufacturers that need it to identify by the source.
Airsoft has slightly different specs/dimension compared with commercial firearms parts. You may see gaps if you install Airaoft rear sight on T91 in addition it may not be able to hold zero and may made form 6061 instead 7075, standard coatings, etc..
The only thing I can says is find the reliable sources if you need Mil-Spec T91 parts.

Are you asking because of the parts available on ebay that are marked as T91 authentic, but significantly cheaper than the stuff available through the T91 store?
